1 pound lean ground meat, beef, turkey or lamb are good, locally-grown if possible · 1/4 cup fine breadcrumbs · 1 egg or 1 teaspoon canola oil · 4 whole-wheat burger buns
2 cups Monterey Jack cheese, shredded or sliced · 1/4 medium onion or 1 large shallot, finely chopped · 1 teaspoon mustard, suggest whole grain or Dijon · 1/2 teaspoon ground cinnamon
||Using a non-stick skillet or saucepan, melt cheese over medium heat. Stir so cheese does not burn. Stir in mustard, then add onions, continuing to stir until all is combined. Sprinkle over the cinnamon, stir. Serve immediately, poured over burgers.
Combine the meat, breadcrumbs and egg or oil. Form meat into four patties. Grill on a stovetop grill or outdoor grill. Toast buns, if desired. Serve topped with Animal Sauce.
