||Place the cauliflower, garlic and broth (or water) in a saucepan; bring to a boil. Cover and reduce to a simmer until tender, about 20 minutes. Drain, and place the cauliflower and garlic in a food processor or blender. Add remaining ingredients, including feta if desired, and puree until smooth. Taste, and adjust seasonings. Serve with pita chips or fresh carrot sticks.
