Gina’s White Bean Chili |

| Ingredients: | 1 14-ounce can great northern white beans • 15 ounces diced tomatoes with juice or 15 ounces salsa (mild or spicy, your choice) • ½ cup chicken broth or water • 2 teaspoons cumin • 1 ½ teaspoon chili powder, or more to taste • 1 cup frozen or fresh corn • 4 cups cooked chicken, diced or shredded • 2 ounces Monterey jack cheese, shredded |
| Directions: | Combine all ingredients except corn, chicken and cheese in a large pot. Cover, and bring to a simmer. Simmer for 30 minutes, until beans are soft; stir in corn and chicken, and simmer uncovered for another 10 minutes. Remove from the heat. Stir in cheese — do not allow to boil. Serve once cheese is melted. Garnish with shredded cheese. |
