Thai Cucumber Salad |

| Ingredients: | ¼ cup seasoned rice vinegar · 1 tablespoon sugar ·1 large cucumber · ½ teaspoon dried red pepper flakes, more or less to taste · Zest from ½ lemon · ½ sweet red bell pepper, cored, seeded and diced · ¼ cup julienned carrots |
| Directions: | Combine rice vinegar and sugar in a medium glass bowl. Peel and seed cucumber. Cut into thin slices; add to vinegar mixture. Sprinkle with red pepper flakes. Refrigerate up to 8 hours before serving. Before serving, toss in lemon zest, diced bell pepper and carrots. |
