I’m notoriously guilty of skipping breakfast. Mornings are always crazy busy, and I never have time to scramble eggs or make French toast (unless it’s the weekend). I noticed on Instagram that smoothie bowls are getting super popular, so I decided to hop on that bandwagon.
BOY, am I glad I did! These smoothie bowls taste like soft serve ice cream (texture has a lot to do with it). Bananas are the real star ingredient. If you blend frozen bananas past a certain point, the consistency becomes smooth and creamy like soft ice cream! I’m not kidding! As you’re blending, you’ll get to a point where you’re not sure if you’re done – keep on blending. The texture will come, you’ve just gotta be patient.
While I love bananas and peach together, you should feel free to add in any fruit that sparks your fancy (and are in season). I’ve blended in blueberries, blackberries, pineapple, and numerous other fruits. You can also add in flaxseed or spirulina powder for extra health benefits. I love adding in pecans and other nuts for an extra crunch.

2 bananas, frozen
½ a peach
1 tablespoon honey
1 teaspoon lemon juice
Strawberries, to garnish
Pecans, toasted
Instructions
1. In a powerful blender, blend the bananas until creamy and smooth. (Don’t stop until the consistency is like soft serve ice cream, trust me)
2. Add in the peaches, honey, and lemon juice and blend until smooth. Serve garnished with strawberries and toasted pecans.
