Here at AY Magazine, we’re all about burritos and enchiladas this month. AY President and Publisher Heather Baker has been crisscrossing Central Arkansas with KARK hosts Hilary Hunt and DJ Williams this month in search of the very best that the state has to offer for the Burritos and Enchiladas Bucket List tour. Their business has been burritos, and business has been good.

 

This week, Baker and Hunt are heading to Mexican food hotspot Cantina Laredo for some delicious grub.

“I believe in celebrating Cinco de Mayo the whole month of May, and we’re in a good spot,” Hunt says.

 

“Amen, girl. We’re at Cantina Laredo right here in Midtown, and Chris has pulled out all the stops. Our table is full, and I am ready to eat,” Baker says.

That Chris is Cantina Laredo’s general manager and proprietor Chris Lane, and he is, indeed, pulling out all the stops.

 

Lane outlines his plan of attack for this Bucket List visit. He will start off with some signature burritos and Cantina Laredo’s chicken chimichanga. Cantina Loredo has a pollo asado burritos and a carne asada fajita burrito.

“Our burritos have a poblano pepper, cheese with your choice of beef or chicken with a chipotle wine sauce, covered with either sour cream sauce or chile con queso,” he says.

 

But Lane is not stopping there. “We’re also going to fill up the table for Hilary and Heather today with some incredible signature items. A little bit of seafood, a little bit of beef, a little bit of shrimp, you name it,” he says.

He will be sending out specialties, like their sea bass, a grouper dish and a 16 oz. bone-in ribeye. Baker and Hunt will have their work cut out for them!

 

Once everything is assembled and brought out, both Baker and Hunt are speechless. “I don’t even not what to say to this incredible table,” Baker says.

But both of them can agree on one word: Wowza.

 

“We have different fishes, enchiladas, burritos, salsa, guacamole, drinks. We have a whole another table of food that they’ve brought out. I don’t even know how we’re going to eat all of this,” Baker says.

“Can we start eating, and we’ll tell you about it?” Hunts jokes.

 

Hunt starts with the steak burrito, and it’s an immediate winner. “This steak burrito is a mack daddy. It’s got everything,” Hunt says.

Meanwhile, Baker goes for one of the enchiladas, along with some of the seafood, including some “big daddy shrimp.” But back to the enchilada, which Baker says, “This artichoke and avocado enchilada is amazing. The heat is packed with goodness.”

 

Baker then tries out one of Cantina Laredo’s signature burritos but opts for the chicken instead of steak. “Now it’s time for the chicken,” Baker says. “I have the chicken fajita burrito, and it’s loaded with cheese dip.”

As we all know, everything is better with cheese dip!

 

As Baker and Hunt sit on Cantina Laredo’s beautiful patio, they dip tasty cocktails and work their way through the vast array of burritos, enchiladas and other dishes. It’s hard work, but they’re committed to seeing it through.
