Every month, AY Magazine Publisher Heather Baker and KARK host DJ Williams search for the best in food around Arkansas. Whether it’s pasta or sandwiches, they head to the restaurants and spots that serve up the greatest in their cuisine.

 

For March, they’re shaking things up with this list. They’re trying the best food trucks in the state! Get ready to get your meals from a place on wheels in this Food Truck Bucket List, sponsored by The Lab Food Truck by Kemuri.

 

When you think of Kemuri, you usually think sushi, right? This new food truck serves up a variety of food, from grilled three-cheese sandwiches to burritos and more. Let’s get a closer look!

“I’m very excited about this. I heard that Kemuri has a food truck, and I didn’t even know about it,” Williams says.

 

“It’s an all new concept – new, different food,” Baker says. “So, we’re going have to tell you what’s on the menu.”

With that the two culinary experts head up to the Lab and place their order. Williams opts for a vegan option, while Baker tries out the miso cheesy burger and the Lab rice bowl.

 

Williams’ dish, the coco niño burrito, contains 24-hour sous vide pork belly with black-eyed pea hummus, sofrito rice, sweet peppers, miso onions, queso fresco, salsa roja and fresh avocado.

 

Meanwhile, the miso cheesy burger has aged ground beef, miso glazed onions, quick pickled, tomato jam, American cheese and gochu-mayo. The Lab rice bowl has steamed jasmine rice, sesame crunch, pickled red onions, mirin carrots, salt tomatoes, cured cucumbers and the option of a fried egg.

What the verdict? After tasting his coco niño burrito, Williams is a renewed believer in vegan food. “I was a little apprehensive about trying to do some vegan things, but if this is eating vegan, I can get down with the cause,” he says.

 

The Lab rice bowl and the burger get top marks, too. “The pork is divine. It even has a crunch to it. It was amazing, and it had the rice underneath it. There’s some spicy and some sweet in it,” Baker says.

 

Both Baker and Williams agree that the Lab Food Truck is definitely a spot to hit in Little Rock. “This food truck is off to a great start. I’m very pumped up about it,” Williams says.
