George’s Restaurant, located at 2120 Grand Avenue in Fort Smith, was co-founded by brothers Alex and George Catsavis, and is now owned by Alex Catsavis. It’s been a locally family owned restaurant for 40 years.
For Catsavis, the key to a great French fry is quality. “It’s more about the quality of the potato than the size,” Catsavis says, noting that his potato provider changes based on who he thinks has the best potatoes at the time.
“We try to test them before we fry them to see which ones fry better than others,” he says.
The potatoes are cut with a hand-operated cutter that can change blades for different sizes. The cut size is typically three-eighth of an inch.
“We use fresh cut French fries, cut hourly and use high quality oil.”
While Catsavis still has the same number of shipments of potatoes as he did before COVID-19, the volume has been reduced to ensure that only the freshest potatoes are served.
Catsavis points out that there are unlimited combinations of fries a customer can order, from cheese, to chilli cheese, to cheese and bacon, to gravy.
“We’ll put whatever you like on them,” he says.
The most popular topping is chili cheese. He also tells us that the most popular sauces are ketchup and his house made ranch.
