Every Friday, AY chooses a local eatery dedicated to bringing Arkansans binge-worthy fries and delicious, homemade sauces.
For this week’s Fry Day, we’re highlighting the fries at Parkside Public in Rogers.
According to employee Evan Garvey, Parkside Public opened at the end of 2013 to help grow the food scene in Rogers. The restaurant has thrived ever since.
It offers both regular French fries and sweet potato fries. Garvey says the fries are as unique as they are limitless.
“We have unique fries. We have our version of poutine, we’ve got dirty fries, chili cheese fries…in the summer we usually do pulled pork fries. It’s so much more than just a fry in ketchup.”
When asked what exactly “poutine” is, Garvey tells us that “poutine is traditionally cheese curds and gravy.” But here in the South, they’ve tweaked the recipe: this roast beef brown gravy with monterey jack goes on top of fries.
Garvey adds that Parkside Public also has garlic parmesan fries, and loaded fries topped with bacon, cheddar cheese, fresh jalapenos, onion, sour cream, and sriracha.
Sometimes the restaurant even makes sweet potato fries with gouda cheese, bacon, and maple syrup. “It’s kind of whatever we’re feeling that day.”
Parkside Public has a wide assortment of sauces, and for every sauce, Garvey says, there’s a customer who will dip their fries in it. Some include a homemade mayo, a cayenne ranch and a Jamaican sauce called “pick and pepper” which Garvey likens to A1 steak sauce.
