AY About You Magazine is rolling past the sushi and into a new Bucket List tour.

 

During May, AY President and Publisher Heather Baker and KARK host Hilary Hunt will be on the lookout for the best burritos in Central Arkansas. Fortunately, they’ll have a little help from the handy Burritos and Enchiladas list included in this month’s issue of AY.

For the first stop on the Bucket List tour, there was only one logical choice. They had to made a trip to Baja Grill. “We are at Baja Grill right here in the Heights. They also have a location in Benton, so you don’t want to miss that one. But we are all about burritos and enchiladas,” Baker says.

 

Founded in 2012 as a food truck, Baja Grill has become an institution in Central Arkansas in less than a decade. There are two locations of the popular Mexi-Cali eatery: one in the Heights and one in downtown Benton.

Cuban Nachos

Before Baker and Hunt dig into the burritos and enchiladas that Baja Grill has prepared for them, they’ve got to take care of something else. “There’s a reason why we’re back,” Hunt says.

 

And that reason is one of Baja Grill’s most popular items: the Cuban nachos. These nachos featuare slow-smoked shredded pork with chipotle aioli, orange red cabbage and jicama slaw, fresco cheese and avocado.

 

“We told ya’ll that we came back here for a reason, and the reason is these nachos. I mean loaded with goodness. But we’re here for burritos and enchiladas, and this is definitely something different for me because it’s not something I would normally order, so I’m excited to get in and dig in,” Baker says.

Once they sample the nachos, it’s on the main attraction: the burritos and enchiladas. And they have a big job to tackle.

 

“They hooked us up with just about everything they’ve got. We’ve got chicken enchiladas. We’ve got the honey chicken burritos – that I’m excited about. The Cuban Burrito – so basically the burrito version of your nachos, and the veggie enchiladas,” Hunt says.

 

“I might need to dig into that,” Baker says.

 

“Can we start eating now?” Hunt says.

One of Hunt’s favorites from the Baja spread was the veggie enchiladas, which she enjoyed for the robust amount of fresh veggies that it packs. “These are so good. These are veggie enchiladas, and they have everything. They have corn, they’ve got onion,” Hunt says.

 

“Look at all of that avocado,” Baker says, pointing out the plump green avocados in the enchiladas.

Baker went for the burritos, trying out the Honey Chipotle Burrito. This burrito has slow-smoked shredded pork that has been candied in honey chipotle sauce and served on a bed of cheddar cheese. It is topped with sweet onion and lettuce tossed in lime salt vinaigrette.

 

For Baker, this burrito is a winner. “It is sweet with a pack of heat. I love it. I love the flavor in it,” she says.

Hunt also is trying her hand at the burritos, and she selects the Cuban Burrito. This has all of the same ingredients as the Cuban Nachos – shredded pork, chipotle aioli, sour orange red cabbage and jicama slaw, fresco cheese and avocado – that has been rolled up into a nice burrito package.

 

“This thing is good. It’s got rice. It’s got the avocado,” Hunt says.

After all of those burritos and enchiladas, Baker and Hunt are ready to call it a day. But it’s not over for the Burritos and Enchiladas Bucket List – there’s more to come. “We have an amazing month jam packed with burritos and enchiladas all over Central Arkansas,” Baker says.
