July Fourth Recipe: Pulled Chicken and BBQ Nachos
We are firing up the grill early and icing the beer. The holiday weekend is just a few days away. Our own Jacob Carpenter, the person who wrangles all the ads that come into AY About You and Arkansas Money & Politics, is getting to be the resident chef here. Look what he whipped up for the Fourth of July! It’s delicious and a crowd-pleaser.
Pulled Chicken and BBQ Nachos Recipe
1 bag Simply Organic White Cheddar Doritos
1 package Three Cheese Mexican Blend Shredded Cheese
1 can black beans
1 can whole kernel corn
3 chopped green onions
1/2 cup or more honey BBQ
3 tablespoon pickled jalapeños
1 cup pulled cooked/roasted chicken (rotisserie chicken is a great option)
Add bag of tortilla chips to a baking dish and then sprinkle a layer of shredded cheese on top.
Spread a layer of corn and black beans on top of the cheese and bake at 350 degrees for about 5-7 minutes and then remove the dish from the oven.
Add jalapeños, green onions, pulled chicken, and bbq in no particular order and follow that with another sprinkle of shredded cheese.
Place back in the oven for 3-5 minutes, or until cheese has melted, and then remove the dish from the oven. Let it cool a few minutes before digging in.
