[dropcap]Can’t[/dropcap] travel to N’awlins for Mardi Gras? That’s OK. Get a taste of The Big Easy at Rick’s Beignets. Owner Rick Rogers’ food truck features sweet and savory menus. The sweet menu features beignets — prepared based on Rogers’ experience cooking in New Orleans restaurants. They are available alone or with Café Du Monde’s coffee and chicory, Community Coffee or in a nontraditional manner: topped with a variety of sweet toppings including cinnamon, strawberry, raspberry, chocolate and more.
The savory menu expands upon the popular, deliciously worthy-of-a-review sweet treat. Rogers uses the pillows of goodness to create sliders: buffalo chicken, ham and cheese and shrimp with homemade remoulade sauce.
Rogers gained experience working in NOLA restaurants as a college student, and he and his wife spend each New Year’s Eve there. The retired Air Force lieutenant colonel plans to open a brick-and-mortar location; however, you can find the above-mentioned fare, as well as NOLA favorites like red beans and rice and gumbo with chicken and andouille sausage, at his food truck, which is usually located at JFK and North Hills boulevards in Sherwood from 8 a.m. to 5 p.m. Monday through Friday.
