Who knew that curried chicken gets its own day? According to nationaldaycalendar.com, it’s National Curried Chicken Day. We can easily get behind this holiday with a serving of Pioneer Woman’s amazing chicken salad with all the right ingredients including the star of the recipe, curry. But the golden raisins and the slivered almonds make it oh-so-good. We recommend toasting the almonds in your skillet with butter. The toasted crunch is perfect.
Pioneer Woman’s Curried Chicken Salad Recipe
1/2 cup mayonnaise
1/2 cup plain Greek yogurt
1/4 cup heavy cream
1/4 cup fresh cilantro, chopped
3 tablespoons curry powder
1 tablespoon sugar
Kosher salt and black pepper, to taste
3 cups diced rotisserie chicken
3/4 cup golden raisins
1/2 cup slivered almonds
4 scallions, thinly sliced
3 stalks celery, thinly sliced
6 large croissants, split
Whisk the mayonnaise, yogurt, heavy cream, cilantro, curry powder and sugar in a large bowl. Season with salt and pepper.
Add the chicken, raisins, almonds, scallions and celery and toss to coat completely. Taste and add more salt and pepper, if needed.
Refrigerate for at least 30 minutes and up to overnight. Serve on the croissants.
