This is the time of year, until about Labor Day, that I start complaining about the heat. Me no likey hot weather. I like sunny and about 68. The temperature being burning hot and 98 degrees makes me a crank pot. 

So my recipes during this time for Recipe Mondays at www.aymag.com will likely reflect my desire for cooler times. This recipe is the perfect summer recipe. It’s tomato season, y’all! And cucumber season. And it’s always a good time for vinegar and oil with a pinch of sugar. 

Marinated Cucumbers and Tomatoes

Ingredients

  • 3 large cucumbers, peeled and cut into 1/4-in. thick slices
  • 3 ripe Arkansas tomatoes, cut into wedges
  • 1 Vidalia onion, sliced into rings
  • 1/2 cup white vinegar
  • 1/2 cup water
  • 1/3 cup olive oil
  • 3 tablespoons granulated sugar
  • 1 tablespoon kosher salt
  • 2 teaspoons freshly ground black pepper

Directions

Place cucumbers, tomatoes, and onion in a large bowl; set aside.

Then whisk together vinegar, water, olive oil, sugar, salt, and pepper in a medium bowl until sugar and salt dissolve. 

Pour dressing over cucumber mixture; toss to coat. Cover and chill at least two hours.
