Her recipes are on point, and I thought this was a really good one for a yummy and unique breakfast. She says, “Breakfast has never been easier or more delicious 😋.”
Baked Eggs in Tortilla Cups
Ingredients:
6 corn or flour tortillas (6-inch)
2 cups shredded Mexican blend cheese, divided
7 eggs beaten with 1/4 cup milk or cream, salt and pepper to taste
6 pieces of prosciutto
1/2 cup chopped onion
1/4 cup chopped red bell pepper
1 handful of baby spinach leaves, torn apart
2 tablespoons chopped parsley
1/8 teaspoon salt
1/8 teaspoon pepper
Instructions:
Sauté the onions and peppers until soft, set aside.
On a piece of waxed paper, spray each tortilla on both sides with vegetable cooking spray and press that into a muffin tin that has been sprayed with cooking spray. Divide 1 cup of cheese evenly into tortilla-lined muffin cups. Top with onions and peppers and 1 piece of prosciutto that has been ripped into pieces. Add a few spinach leaves and remaining cheese. In a bowl, combine eggs, milk, parsley salt and pepper. Carefully pour into tortilla cups. Bake at 350°F for 18-20 minutes or until eggs are set. Carefully remove from muffin tin.
