Recipe Monday is here with a delicious dessert and a recipe I haven’t seen before.
I found it on the Instagram page for @annscar. She calls herself a “scratch baker.”
All of her recipes are good. This one is no exception. She is responsible for the photo and recipe.
Club Cracker Crunch Bars
Ingredients
2 sleeves of club crackers
1 ½ sticks unsalted butter
¾ c. brown sugar
¾ c. sugar
1 ½ c. graham cracker crumbs
⅓ c. milk
1 c. chocolate chips
¼ c. creamy peanut butter
Directions

Line a 9 x 13 pan with foil. Spread club crackers across the bottom of the pan. Push the crackers close together.

Over medium high heat in a saucepan, soften the butter. Add graham crackers, sugars and milk. Stir until well blended.

When the mixture starts to boil, set the timer for 5 minutes. Stir constantly. Remove from heat and pour half of mixture over the pan of crackers.

Place a second layer of crackers over the warm sugar mixture. Pour the remaining sugar mixture over the crackers. Add a third layer of crackers.

To make the chocolate topping, place chocolate chips and peanut butter in a bowl and microwave for 30-50 second intervals until smooth and creamy.

Pour warm chocolate mixture over the final cracker layer.

Place in fridge to cool and then remove and cut into squares. Store in an airtight container.
