Recipe Monday: Crockpot Hot Tamale Frito Pie
Cooler weather is on the horizon, and Labor Day is next weekend. We think it’s time for cool-weather food, and the kind that can feed a few friends is perfect. Our advertising coordinator with AY Media Group, Jacob Carpenter, whipped this up and proudly showed off his accomplishments.
Crockpot Hot Tamale Frito Pie Recipe
2 cans Hormel Hot Tamales
1 bell pepper
1 brick Velveeta
2 cans Rotel
1 teaspoon garlic pepper
1 teaspoon chili powder
1 teaspoon Soul Food Seasoning
1 package Fritos
Unwrap tamales and place in a large bowl. Next, pour 1/2 of the juice from the can into the bowl with the tamales. Take a potato masher or a fork and mash them up until you have no chunks. Next, dice onion and bell pepper to desired size. Once those have been diced, cut Velveeta into small pieces and place into crockpot. Add mashed tamales, Rotel, diced vegetables and the seasonings.
Cook on low for about an hour, stirring every 10-15 mins. Once cheese has melted, serve over a bowl of Fritos.
Garnish with jalapenos, salsa and/or sour cream.
