This will be the most unique guac you’ve ever made, thanks to my friend Christina Wren who is this week’s recipe contributor. I say “contributor,” but it’s more like I stole it from her after she served it to me recently.
It was the WOW food of the night along with all the other things she prepared. But this is unlike any guacamole I had ever had. If you haven’t bought tomatillos before, they are green and near the tomatoes/ garlic/cilantro at the grocery store.
Oh, and did I mention this is really EASY? Boom. You’re having guacamole salsa tonight.
Guacamole Salsa
Ingredients
1 lb. tomatillos
1 jalapeno pepper
1 bunch of cilantro
1 thick slice of yellow onion (about 1/2 inch thick)
3 cloves of garlic
2 avocados
1 teaspoon salt
Directions
Remove husks from tomatillos, then rinse and dry. Cut into quarters and put into blender or food processor. Add jalapeño, cilantro, onion, garlic, avocados, and salt. Make sure the tomatillos are in the bottom of the blender (or food processor).
