Monday Healthy Veggies Recipe

2 cups butternut squash, cut into small chunks
1/4 cup or less dried cherries or cranberries
1/3-1/2 cup walnut pieces
4 tablespoons avocado oil
2 tablespoons chopped rosemary
4 tablespoons hemp seeds
Mix all ingredients together in a large bowl. Spread in a single layer on parchment paper and put in a 425-degree oven for 35-45 minutes. (You’re waiting on the squash to be fork tender and even a little crispy!)
Stir a few times during roasting period, and then lightly drizzle with balsamic vinegar.
