Sheet Pan Roasted Chicken Fajitas With Crispy Bacon Recipe

3-4 chicken breasts, sliced into strips (trim obvious fat)
2 bell peppers, diced
1 large onion, diced
1 can fire-roasted tomatoes, drained
5-6 slices hickory bacon, fried
1 fajita seasoning package
1 teaspoon garlic powder
1 teaspoon paprika
Juice of 1 lime
Three cheese Mexican blend
Set crispy bacon aside.
Season chicken and veggies generously with spices. Place on a cookie sheet and roast for 20-30 minutes at 400 degrees.
When finished, add lime juice, and now place the beloved bacon and cheese on roasted chicken and veggies.
Broil until cheese melts.
Let the dish cool for 5 minutes, and call it amazing.
This could be put in corn or flour tortillas and topped with sour cream, or to keep it grain-free, serve in a bowl with no tortillas. Either way, this is good.
