Salsa with Arkansas tomatoes

Now is the time to buy up all the Arkansas tomatoes you can find. 

 

You can start making your own salsa and if you want the senior-level course, you could can the salsa and preserve it for the year. But let’s not get ahead of ourselves here. 

 

Just do this and make your own guacamole. You’ll thank us later. 

Salsa with Arkansas Tomatoes

Ingredients: 

  • 1 sweet onion, chopped
  • 1 bunch fresh cilantro, chopped
  • 3 garlic cloves, minced
  • 5 slices pickled jalapeno peppers, or to taste
  • 6 Arkansas tomatoes, quartered
  • ½ tsp. cumin
  • ½ lime, juiced
  • ⅛ teaspoon salt
  • ¼ tsp. sugar

 

Directions: 

Add the onion, cilantro, garlic cloves, jalapenos and tomatoes to a food processor and pulse until you like the consistency. Add the cumin, lime juice, salt and sugar. Whirl it again. You just made salsa. I often fry corn tortillas in oil and it’s like a real Mexican restaurant up in here! You could warm corn chips in the oven.
