Raise your hand if you need a dessert for your Valentine’s Day dinner, or a sweet treat to send with your kids to their school parties! These famous red velvet cupcakes with cream cheese icing can’t be beat. The best part? It only takes 40 minutes — from preparation to cleanup — to whip ‘em up. Put raspberries, strawberries, pecans or chocolate chips on top, place them in a personalized cupcake carrier and you’re ready to go.
Red Velvet Cupcakes
- 2 cups sugar
- 1 ¼ cups canola oil
- 2 ½ cups self rising flour
- 1 ½ cups buttermilk
- 2 eggs at room temperature
- 1 tsp. cocoa
- 1 tsp. baking soda
- 1 tsp. salt
- 1 oz. red food coloring
Mix together cream, sugar and oil. Add eggs. In a separate bowl, mix together the flour, cocoa, soda and salt. Add it to cream mixture with buttermilk. Add in vanilla and food coloring. Grease and flour cupcake pans or add festive Valentine’s Day liners. Bake at 350 degrees for approximately 25-28 minutes.
Hint: Don’t have buttermilk on hand? Just add 1 tablespoon of white vinegar or 1 tablespoon of lemon juice to 1 cup of milk. Let it stand for five minutes. Voilà!
Cream Cheese Icing
- 16 oz. cream cheese, softened
- 2 sticks butter, softened
- 1 tsp. vanilla extract
- 4 cups powdered sugar
Blend together sugar, cream cheese, butter and vanilla. Pipe icing on cupcakes after they have cooled. Top with raspberries, strawberries, pecans or chocolate chips.
