The golden days of summer may be slipping by, but I’m not ready to let go yet. Cold, delicious drinks still win over my innate craving of pumpkin spiced lattes during this time of year.
But who says they have to be cocktails? There are plenty of amazing flavors that come from the fresh fruit at the summer farmers’ markets. There’s plenty of time left to experiment in the kitchen.
This Blackberry Bubbly Mocktail is sweet and simple, and tastes fancier than it actually is. Forget plain old soda for people who don’t drink alcohol. Hello fancy cocktail glasses with fancy mocktails. Drink up!
Blackberry Bubbly Mocktail
¼ cup water
1 tablespoon honey
Ginger ale, as the bubbly base of each glass
Thyme or your favorite edible florals for garnish
Corn syrup and turbinado sugar
1. In a small saucepan, simmer water and honey stirred together. Add in blackberries and use a spoon to mash the blackberries.
2. Simmer until the blackberries have emulsified. Strain the blackberry syrup into a bowl. Let the syrup cool completely.
3. Dip the rims of your serving glasses with corn syrup (or butter) and then dip in a shallow dish piled with turbinado sugar
4. Fill each glass halfway with ginger ale and then add 2-3 tablespoons of blackberry syrup to each glass. Garnish with thyme or florals.
