Another week, another salad. As AY About You continues its pursuit of some of Arkansas’ best salads, AY Publisher Heather Baker found her salad craving fulfilled at Little Rock’s Scallions in the Heights.

 

Along with KARK host Carmen Rose, Baker was served on Scallions’ beautiful outdoor patio, treated to a spread you won’t want to miss.

“Open since 1986, Scallions’ has a beautiful patio,” Rose says. “And we want a cold salad – especially in this heat.”

 

Owner Chip Meadows whipped up some of the restaurant’s signature dishes, including Heather’s favorite: the homemade cheese soup.

“Let me tell you a little bit about what we’re going to have on the menu today for Heather and Carmen,” Meadows says. “Today we’re going to offer them our grilled salmon and mango salad, which features feta, grape tomatoes – local, Arkansas-grown grape tomatoes – toasted almonds and a balsamic vinaigrette with a nice piece of grilled salmon.

 

“We are also going to use some Arkansas tomatoes for a stuffed tomato featuring our tuna salad. That’s going to be served with a poppyseed muffin and a fruit cup. We are also going to see a chicken salad stuffed avocado, which is going to be served with our famous cheese soup.

“Last but not least, we’re going to be using those Arkansas tomatoes for a bacon-avocado-tomato sandwich with a basil mayo.”

 

As Carmen admired the fresh ingredients on her grilled salmon and mango salad, noting how the mango, almonds, tomato, avocados and spring greens didn’t leave her hungry, Baker started in on her cheese soup.

 

“This soup is amazing. This is what they’re known for,” Baker says. “This cheese soup – they make it here fresh. It’s a slow process. They have to make it every day. It’s so amazing.”

 

“You know what sounds good with that cheese soup?” Rose asked. “Dipping that BLAT in there.”

After dipping her sandwich, Rose came to the conclusion that all around, Scallions was a 10 out of 10.

 

“I’m not leaving hungry,” she says.
