Presented with a side of lime, salsa verde and salsa roja, this taco was visibly steaming and filling my senses with hints of heat. Shredded pork smothered in salsa de adobo and pineapple, topped with diced onion, all blanketing an in-house made corn tortilla is the perfect ending to a long day.
If messy eating is what you live for, this al pastor taco will make all of your dreams come true. The juice of the meat combined with the salsa (salsa de adobo, salsa verde, salsa roja) are enough to fill your mouth and still leave plenty dripping on the plate to sop as you go – which is exactly what I did.
Before I added the salsa verde and salsa roja, the taco itself didn’t carry an overwhelming amount of heat – just enough to make my mouth zing with the shot of flavor provided by the salsa adobo. The pork was cooked so well that it almost dissolved with the sheer tenderness of it. The diced onion and pineapple provided the necessary crunch to offset and compliment a contrast in textures.
I hear that it’s just as delicious with the addition of cilantro, but sadly I have the gene (OR26A) that tells my palette cilantro tastes like soap – so if you’re like me, do not fear, it can be removed – if you’re not like me, do not fear, you can pile that stuff onto your taco to your heart’s content.
