For this week’s Taco Tuesday, AY About You visits Con Quesos: Fusion Tacos in Fayetteville.
The idea of Con Quesos began when Omar Kasim was a student at the University of Fayetteville. He created a plan for a restaurant that would serve fusion tacos to the Fayetteville community for a course project. He fell in love with the idea on paper, so he opened Con Quesos in January 2016. Almost five years later, Con Quesos is still serving the most inventive tacos in town.
“My goal with Con Quesos was to provide Fayetteville with eclectic choices from around the world. We incorporate flavors from around the world into our food” says Kasim. “I’m half Caribbean and half Pakistani, so I come from a very diverse background, and that was part of my inspiration for the menu too.”
The menu takes customers from the Caribbean to the Mediterrarean to India for their tacos. The most popular taco, according to Kasim, is the los cabos, which includes grilled chicken, refried beans, queso and cilantro, making it a more traditional taco with Hispanic flavors. One of their more eclectic dishes is the game day taco that includes chopped brisket avocado, cilantro and grilled jalapeño. The bombay taco piles chicken tikka masala and basmati rice onto a tortilla.
All of Con Quesos’ ingredients are made from scratch. The restaurant is also open for breakfast, and they serve up huevos con quesos with chorizo and sriracha. Con Quesos has plenty of shareables to choose from as well, including chorizo meatballs that are topped with a chipotle crema. The elote street corn is another favorite, including grilled corn, feta cheese and mayo.
