If you haven’t noticed, it’s a little chilly outside. Because of that, I wouldn’t recommend risking a drive to any taco joints until it’s safe for vehicles to be out and about – but that doesn’t mean Taco Tuesday should freeze. Well, it can freeze, but in a tasty way. Below you will find a recipe for snow ice cream tacos to get your fix.

 

These tacos may not be your usual run-of-the-mill protein and cheese on a tortilla, but I think you’ll be pleased with them. Arkansas has finally received a mountain of snow, and what better way to enjoy it than to ingest it? Not the yellow snow, though, never the yellow.

 

Find a safe patch of snow, shovel a good amount into a bowl, and keep it frozen until you gather the four ingredients for the ice cream from your kitchen.

 

Vanilla Snow Cream

 

Ingredients:

  • 1 cup milk (any kind)
  • ⅓ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 pinch of salt
  • 8 cups clean snow

 

Directions:

  • Whisk the milk, sugar, vanilla and salt together in a large bowl until combined. 
  • Add in the snow and mix together quickly because the mixture melts quickly. The ice cream should be a fluffy consistency.
  • Freeze until later!

 

For those looking for a little more excitement than vanilla, chocolate is always a good choice.

 

Chocolate Snow Cream

 

Ingredients:

  • 1 cup of milk (any kind)
  • ¼ cup of sugar
  • 1 pinch of salt
  • Heaping tablespoon of cocoa powder
  • 6 cups of clean snow

 

Directions:

  • Whisk the milk, sugar, salt and cocoa powder together until combined.
  • Add in the snow and mix together quickly until the ingredients are completely spread throughout the snow.
  • Freeze!

 

Now comes the fun part. While your snow cream is freezing (either outside or in your freezer), grab some small flour tortillas just like you would if you were making normal tacos. 

 

Ingredients:

  • 2 tablespoons of cinnamon
  • ¼ cup of sugar
  • 2 cups of chocolate chips
  • 2 tablespoons of butter

 

Directions:

  • On a small plate, combine and mix the cinnamon and sugar.
  • Melt chocolate chips over a double boiler until smooth and set aside.
  • Heat the butter in a skillet over medium heat. Add tortillas and sautee individually until golden and crisp (2 minutes per side). Cover both sides of the tortilla with the cinnamon sugar mixture.
  • Get out a muffin pan and flip it upside down. Fold tortillas in half and dip the edges in the melted chocolate. Stand the tortillas upright in the upside down muffin pan. Let sit until chocolate has hardened.

 

If you don’t have any small flour tortillas, pancakes, waffles and toast can work just as well! The important thing is that you and your family have fun taking advantage of this time together. Get out all the toppings (sprinkles, coconut shavings, chocolate chips) and make the snow cream taco of your dreams.
